Properties: white monoclinic or hexagonal crystalline powder, achromaticity Slaty or scaly crystalline when recrystaled in ethanol aqueous. Odorless and special bitter. Melting point is 160℃. The pH value is 5.5-7.0 in 5% aqueous. Stability in heat, air and light. Soluble in water(8.85mg/100mL, 25℃). Insoluble in ethanol and ether. Difficult to isolate from leucine. Essential amino acid.
Usage: nutritional supplements
Application: preduce sesame egg flavor if added into rice pastry; Improve the flavor of bread.
