Stable in the air in dry state, and can be stored for long periods. it slowly decomposes and is colored as absorbing moisture. pH value is 3.13 in 1% aqueous solution. It is more stable when pH value is 2–4 in aqueous solution. Not stable to heat when pH value is 5.5 above. break down when exposed to Ultraviolet rays. Melt and partially decompose at about 248℃. Easily soluble in water (1:1). Soluble in ethanol, glycerol, propylene glycol. Insoluble in ether and benzene. Usage: nutritional supplements Applications: used in condiments, meat sausages, bakery, cereal products, milk and dairy products. And also used in wheat flour, bread, noodles, soy sauce, margarine, cakes, soft drinks, jam and other foods.
