Chemical name: L-ascorbic acid sodium Molecular formula: C6H7NaO6 CAS: 134-03-2 Properities: white to yellow-white crystal or crystalline powder, odorless or almost odorless, slightly salty. Relatively stable in dry state, slowly oxidating and decomposed after absorbing moisture and in aqueous solution, gradually browning by the illumination. Decomposition temperature (melting point) is up to 218℃, break down while melting. Easily soluble in water, slightly soluble in methanol, difficultly dissolve in ethanol, insoluble in chloroform and ether, weakly alkaline in aqueous solution. Its solution is unstable and quickly oxidized when pH is higher than 6.0. Its solution is also quickly oxidized at room temperature because of its strong reducibility and instability to oxidant. Usage: nutritional supplement, antioxidant. color retention reagent. the function is basically the same as vitamin C. 1g of physiological functions of this product is equivalent to 0.9g vitamin C. it is easy to use because of no acidity and good solubility. Application: widely used in fresh fixing of ham, sausage, fresh cake, and mouldy prevention of moon-cake and cake. And used for wrinkle-free, anti-aging, whitening when added into cosmetics. It can prevent oxidation and stabilize color when added into frozen aquatic products.
